As many lg. baking potatoes as you need, oiled, and salted with kosher salt
Baked until done, 400 for 1 hr., or so, until soft in center.
In skillet, saute, minced ham, cooked bacon, cooked ground beef, onions, red, yellow, green peppers, and fresh chopped garlic. Saute to the tenderness you like.
Split baked potato is the center, open almost all the way through, but not quite all the way, and top with as much sauted topping as you
like.
Top potato with about 1 c. of your favorite shredded cheese, Mozzarella, Cheddar, Monterey Jack, Pepper Jack, Taco, Mexican, whatever you like.
Microwave, or return to oven until cheese is all melted.
Serve with a side of salsa, guacamole, and sour cream.
A full meal in itself.
