PICANTE POTATO PIE

- 5 eggs
- 2 1/2 cups frozen shredded has brown potatoes
- 1/2 cup shredded sharp cheddar cheese
- 1 cup 4oz shredded Monterey Jack cheese
- 2/3 cup picante sauce
- 2 green onions sliced
- 1/4 teaspoon salt
- 6 bacon strips cooked and crumbled
- additional sauce
Instructions
- In bowl beat eggs,
- stir in picante sauce, onions, and salt.
- Stir in hash browns
- pour into a greased 9-inch pie plate
- cover and refrigerate overnight
- Remove from refrigerator 30 minutes before bakingsprinkle on cheese
- Bake at 350 for 25 minutes
- sprinkle on bacon and bake 5-10 minutes longer or until a knife inserts near center comes out clean.
- Serve with extra sauce
- serves 6
