Easy Beef or Chicken Enchiladas

List of Ingredients
- 1 bag frozen Beef or Chicken Taquitos wrapped in corn tortillas
- 1 large can of mild enchilada sauce or red chile sauce
- 1 cup chopped onions
- 1 1/2 to 2 cups Monterey Jack or cheddar cheese.
- ADDTINAL TOPPINGS
- sour cream
- chopped green onions
- black olives
- jalapenos
Instructions
- Preheat oven to 350°. Fill an aluminum pan with the taquitos in a single layer, filling in any spaces with pieces of taquitos if necessary. Sprinkle the onion over the taquitos then pour the enchilada sauce over top, and then sprinkle with cheese. Bake for 25 minutes or until cheese is melted and golden brown. Add additional toppings, if desired.
