LEMON BARS
List of Ingredients
1/2 Cup flour
2/3 C icing sugar (confectionary)
3/4 C butter or margarine, softented
3 eggs, lightly beaten
1 1/2 Cup lemon Juice
Additional icing sugar

Combine flour, sugar and butter; pat into a greased 13 by 9 by 2 inch pan. Bake at 350 (180^C) degrees for 20 minutes. Meanwhile, in a bowl, whisk eggs, sugar, flour and lemon juice until frothy; pour over the hot crust. Bake at 350 (180^C) degrees for 20-25 minutes or until light brown. Cool on a wire rack. Dust with icing sugar. Cut into squares. Yields 3-4 doz
