    Crunchy Fried Chicken

    List of Ingredients


    • 4 eggs, beaten
    • ¼ cup milk
    • ¼ cup water
    • 1 tsp salt
    • ½ tsp cayenne
    • ½ tsp black pepper
    • ¼ tsp garlic powder
    • 1 fryer (about 2½ pounds), cut into serving pieces
    • 2 cups all-purpose flour
    • 1 Tbsp baking powder
    • 1 tsp cayenne
    • 1½ tsp salt
    • ½ tsp black pepper
    • Lard or solid vegetable shortening, for deep-frying


    Instructions


    1. Mix together the eggs, milk, water, 1 teaspoon salt, ½ teaspoon cayenne, black pepper and garlic powder in a large bowl. Add the chicken and toss to coat evenly. Soak the chicken in the mixture for about 1 hour in the refrigerator.

    2. Mix together the flour, baking powder, 1 teaspoon cayenne, 1½ teaspoon salt and black pepper in another bowl. Remove the chicken, a couple of pieces at a time, from the egg mixture and shake off any excess.

    3. Roll in the seasoned flour and deep-fry in hot oil until golden brown and the chicken pops to the surface. Repeat the process until all of the chicken is cooked. Drain on paper towels.

      Makes 4 servings.
