    Lasyone's Red Beans and Rice

    Lasyone's (Natchitoches, Louisiana)

    List of Ingredients


    • 1 (16-ounce) bag dried red kidney beans, rinsed
    • ½ cup lard or bacon drippings
    • 1 green bell pepper, chopped
    • 1 onion, chopped
    • 2 ribs celery, chopped
    • 10 cups water
    • 1 pound smoked sausage, cut in half lengthwise
    • 2 tsp sugar
    • 2 tsp salt
    • 1 tsp granulated garlic
    • ½ tsp dried parsley flakes
    • ¼ tsp ground red pepper (cayenne)
    • Garnish: dried red chilies


    Instructions


    1. In a large Dutch oven, combine beans, lard, bell pepper, onion and celery. Add water and cook, uncovered, over medium heat for 1½ hours.

    2. Add sausage, sugar, salt, garlic, parsley and red pepper, and cook about 30 minutes, or until beans are tender, adding more water if needed. Serve over white rice. Garnish with dried red chilies, if desired.

      Makes 10 to 12 servings.
