    Mom Page's Strawberry Jam

    List of Ingredients


    • 5 lbs. fresh strawberries, hulled
    • 1/2 cup lemon juice
    • 8 cups granulated sugar


    Instructions


    1. Mash the fruit with a potato masher in a large bowl, and transfer to a large heavy saucepan. Bring it to a rolling boil over medium heat, about 45 minutes.

    2. Stir in the lemon juice and sugar, increase the heat, and bring to a hard boil that cannot be stirred down. Begin to check for jelling.

    3. When it is jelled, ladle it into 10 hot sterilized half-pint mason jars, leaving 1/4-inch head room. Wipe the rims and seal the jars. Process in a boiling water bath for 10 minutes.

      Makes 10 half-pints.
