List of Ingredients
1 1/2 c. chopped onions
3/4 c. chopped yellow summer squash
3/4 c. chopped zucchini
1/2 c. chopped red bell pepper
1/4 c. finely chopped fresh parsley
3/4 t. thyme
1/2 t. rosemary
6 egg whites
1/4 t. black pepper
Recipe
In large, nonstick skillet cook onions until soft. Add yellow squash,
zucchini and bell pepper; cook and stir 3 minutes or until tender. Add
herbs; cook
and stir 1 minute.
Whisk egg whites and black pepper in a small bowl until blended. Add to
vegetable mixture; gently stir until eggs are set.
