Zucchini and Tomato Frittata

List of Ingredients
1 medium zucchini, cut in half lengthwise, then into 1/4-inch slices
1 tomato, chopped
2 teaspoons Minced Onions
1/2 teaspoon Garlic Powder
1/4 teaspoon Thyme Leaves
1/8 Ground Black Pepper
4 large egg whites

Directions:
1. Heat nonstick omelet pan or large skillet over medium-high heat sprayed w/ pam** . Add zucchini and sauté 2 minutes.
2. Add tomato, minced onion, garlic powder, thyme, seasoned pepper. Sauté 1 minute.
3. Beat egg whites well. Pour over vegetables in skillet. Cover, reduce heat to medium-low and cook 7 minutes.
This makes 2 servings for men 1 serving!
