Recipe Introduction
: Makes approximately 4-5 cups of barbeque sauce.
List of Ingredients
* 1/4 to 1/2 small onion, grated
* 3 cloves garlic
* 20 oz can of no-salt-added tomato paste
* 14 oz can of low sodium chicken broth
* 1/2 cup of balsamic vinegar
* 4-5 capfuls of Liquid Smoke
* brown Sugar Twin (sugar substitute) to taste
* ground black pepper
Recipe
Drizzle a little chicken broth into a medium saucepan and grate onion into pan to allow onions to sweat. After onions cook a little, add minced garlic and saute. Add tomato paste and enough chicken broth to thin out tomato paste (you may want to add it little-by-little to get the consistency you like). Add balsamic vinegar and Liquid Smoke. Add enough brown sugar substitute and ground black pepper to your taste.
For the rabbit:
Wash rabbit pieces under cold running water and pat dry. Place in large shallow dish that can be refrigerated. Combine remaining ingredients in small mixing bowl and stir well. Pour mixture over rabbit and cover tightly with foil. Refrigerate overnight, turn once before retiring. When ready to roast, remove rabbit from refrigerator. Place 4 pieces rabbit in 20 inch piece heavy-duty foil. Spoon on 2 tablespoons marinade and seal tightly. Repeat process with remaining rabbit pieces. Grill 1 hour, opening foil, turning meat and brushing with marinade every 15 minutes. Makes 8 servings.
