1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 egg
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1 cup quick-cooking rolled oats
1 cup coconut
1 cup raisins, dried cherries, dried cranberries or mixed dried fruit

Recipe
1. In a large mixing bowl beat butter with electrix mixer on medium
to high speed for 30 seconds. Add granulated sugar, brown sugar,
baking powder and baking soda. Beat until combined, scraping sides of
bowl occasionally. Beat in egg and vanilla until combined. Beat in as
much of the flour as you can with the mixer. Stir in any remaining
flour. Stir in rolled oats, coconut and raisins.
2. Drop dough by rounded teaspoons 2 inches apart onto an ungreased
cookie sheet. Bake in a 375 oven about 8 minutes or until edges are
golden. Cool on cookie sheet 1 minute. Transfer to a wire rack and
let cool.
