    FROZEN BLUEBERRY MUFFINS

    List of Ingredients

    4 cups flour
    4 tsps. baking powder
    ½ tsp. salt
    1 cup margarine, softened
    2 cups sugar
    4 eggs
    1 cup milk
    2 tsps. vanilla
    2 cups frozen blueberries

    Topping:
    2 tbsps. sugar
    ½ tsp. nutmeg



    Recipe


    In a large bowl, combine the flour, baking powder and salt. In a mixing bowl, cream butter and sugar. Add eggs, milk and vanilla; mix well. Stir in the dry ingredients just until moistened. Fold in frozen blueberries. Fill greased or paper-lined muffin cups two-thirds full. Combine sugar and nutmeg, sprinkle over muffins. Bake in a 375 degree oven for 20-25 minutes or until muffins test done. Cool in pan for 10 minutes before removing to a wire rack. Yield: 2 dozen.
