Left Over Magic Rice

I found this again sitting in the doctor's office. We all know it now days and this was such a good tip for left overs.
List of Ingredients
- Left over rice about 2 cups
- 1 cup frozen Peas
- 1 1/2 Diced Ham, chicken or pork ( Left over or fresh)
- 1 teaspoon Soy Sauce
- 2 Teaspoon Oil
- 2 Eggs
- 1/2 Cup Scallions
- 1 Teaspoon Vinegar
Instructions
- Large skillet add your oil left over rice on medium and add frozen peas.
- Stir-fry 2 minutes
- Add 1/2 cups leftover ham, chicken or pork and cook for 2 minutes to heat.
- Add 2 beaten eggs and stir fry 1 minute.
- Stir in 1/2 cup sliced scallions and 1 tablespoon each seasoned rice vinegar and soy sauce.
Final Comments
This makes for a quick meal and a pretty ggod one a well. Don't get rid of your left over's.
