This recipe started out as Giada's, whom I admire and love to make her recipes. Tyler and I have made it our own along the way. Tyler and I love this hot chocolate with a kick!
4 1/2 cups whole milk
4 small driedred chilies (such as dried chilies arbol) or to taste (I think I used more, maybe 6 or so)
3 cinnamon sticks, broken in half (I used less, about 2)
3 cups espresso
1 1/2 cups sugar
1 cup unsweetened cocoa powder (I used less, about 3/4 cup)
1/4 cup cocoa powder
1/2 cup powdered sugar
1 cup whipping cream
(We actually don't use the whipped topping on ours, we like just plain hot chocolate)
Recipe
Combine the milk, chilies, and cinnamon sticks in a heavy large saucepan. Bring to a simmer over high heat. Remove from the heat. Cover and steep for 15 mins. Whisk in the espresso, sugar, and 1 cup of cocoa powder. Bring the hot chocolate to a simmer, whisking often. Discard the chilies and cinnamon sticks.
Meanwhille, whisk the powdered sugar and remaining 1/4 cocoa powder in a large bowl to blend. Add the cream and whisk until the mixture is thick.
Ladle the hot chocolate into 8 mugs. Spoon the chocolate whipped crean atop and serve immediately.
