Easy Rice Pudding

- 1 cup Minute Rice
- 2-1/2 cups Milk
- 1/4 cup Sugar
- 1 tablespoon Butter
- 1 teaspoon Vanilla
- 1/4 teaspoon Nutmeg
- 1 Egg Yolk
- 2 tablespoons Milk
- 1/4 cup Brown Sugar
Instructions
- Combine 1 c. minute rice, 2-1/2 c. milk, 1/4 c. sugar, 1 T. butter, 1 t. vanilla, 1/4 t. nutmeg in a sauce pan. Bring to a boil then cook over low heat 20 minutes, stirring frequently.
- Blend 1 egg yolk with 2 T. milk. Slowly add egg mixture to hot rice. Stirring rapidly, add 1/4 c. brown sugar.
