List of Ingredients
1# Raw, frozen / thawed tail on shrimp
2 C Water or just enough to cover the shrimp
1/2 C white vinegar
1 teaspoon sea salt
2 Tablespoons Old Bay Seasoning
4 bay leaf
2-3 leafy celery stalk tops
Recipe
The trick to great shrimp is to not use too much water. Estimate how much water you will use to cover the shrimp and DO NOT RINSE after cooking.
Boil the water with the all of the above seasonings.
In the mean time prepare a large bowl of ice water and have 2 (med - large) zip lock bags handy.
When seasoned water reaches a full boil, add the shrimp. Continue on high heat until the shrimp turn opaque & pink and tails begin to curl.
*If desired, Cut the end off a shrimp to check for doneness, it should be white all the way through.
Quickly remove the shrimp with a large slotted spoon and place into DOUBLE zip lock bag, close securely. Place the bags of shrimp in the ice water bath to halt the cooking, careful not to let any water seep into the bags.
Can place in the fridge until ready to use.
*This method works for *cooked shrimp* as well BUT you just submerge them for a minute or two to tighten them up so they are not mushy after defrosting.
