    SKILLET FISH with LEMON TARAGON “BUTTER”

    Serves: 2

    2 tsp. light margarine
    1/2 tsp. grated lemon peel
    1/4 tsp. prepared mustard
    1/4 tsp. dried tarragon leaves
    4 tsp. lemon juice, ‘divided’
    2 (4 oz.) lean white fish, rinsed and patted dry
    1/4 tsp. paprika
    Nonstick cooking spray

    Combine the first 4 ingredients and 1/2 tsp. lemon juice in small bowl. Blend well with a fork; set aside. Coat 12-in. nonstick cooking spray. Heat over medium heat until hot.

    Drizzle fillets with remaining 2 tsp. lemon juice. Sprinkle one side of each fillet with paprika. Place fillets in skillet, paprika side down; cook 3 minutes. Gently turn and cook 3 minutes longer or until opaque in center. Place fillets on serving plates; top with margarine mixture.
