Blintzes with Fresh Peach Sauce

1 cup low fat creamed cottage cheese
1 3 oz. package fat free cream cheese
1/2 teaspoon vanilla extract
vegetable oil
4 (8-inch) flour tortillas
1 fresh peach, sliced
FRESH PEACH SAUCE:
1/2 cup water
2 tablespoons granulated sugar substitute, or 3 packets
2 lemon juice
3 fresh peaches, thinly sliced
1/4 teaspoon cornstarch or more if needed.
Cream cheeses with vanilla extract until well blended. Heat a 10-inch skillet sprayed with cooking spray.
Briefly heat a tortilla, turning once, over medium heat just until soft. Portion 1/4 cheese mixture in center.
Top with 1/4 peach slices. Fold in two sides, partially covering filling. Roll up to enclose filling and make
rectangular package. Repeat with remaining filling and tortillas. Add small amount of oil as needed to skillet. Heat filled tortillas over medium-low heat until brown on all sides. Serve with warm Fresh Peach Sauce.
FRESH PEACH SAUCE:
Combine water, lemon juice and cornstarch in saucepan. Bring to boil. Boil uncovered until slightly thickened. It should cover the back of a spoon. Remove from heat and stir in sugar substitute and peach slices.
