    Fish: Tuna Stuffed Manicotti

    Serving 4.

    8 cooked manicotti shells
    2 cans tuna, drained
    1/2 c. nonfat cottage cheese or nonfat ricotta
    1 T. dried parsley
    1/4 c. diced onion
    1 t. lemon juice
    1/4 t. dill weed

    Sauce:
    1/2 c. nonfat cottage cheese or ricotta, blended smooth
    1/2 c. plain nonfat yogurt
    1/4 t. dill weed
    1/4 t. garlic powder

    Topping :
    2 T. parmesan cheese

    In a mixing bowl, combine tuna, cottage cheese, parsley, onions, lemon juice. and dill weed. Stuff manicotti shells with the tuna mixture.

    Place seam side down in a 7x11" baking dish sprayed with nonstick spray. combine sauce ingredients and spoon over manicotti. Sprinkle with parmesan cheese.

    Bake 350 degrees for 30 minutes or microwave on high for 8 minutes.

    One serving equals: 285 calories...3 grams fat, 76 mg cholesterol, 327 mg sodium, ++++ Exchanges: 1 bread, 2 lean meat, 1 skim milk.
