Serves: 6.
3 grapefruit
1/2 pound shrimp, cooked
1/4 cup low-fat mayonnaise
3 scallions, chopped
1/2 green pepper, chopped
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground dill
Cut grapefruit in half; remove flesh; keep shells. Chop flesh. Peel and de-vein shrimp. Chop into small bits.
Combine grapefruit, shrimp, mayonnaise, scallions, green pepper, pepper, and dill. Spoon mixture into grapefruit shells; chill thoroughly.
Per serving: 149 calories, 4 grams fat, 61 milligrams cholesterol, 22 grams carbohydrates, 3 grams fiber, 10 grams protein, 66 milligrams sodium.
