Simple "Family Style" Chicken Pot Pie

Recipe Introduction
This is something I tried years ago when I was in a hurry & wanted something hearty to eat for my family. I keep all of this stuff on hand in my pantry & freezer.
List of Ingredients
- 1 lb. cubed, cooked boneless chicken
- 1- 10.75oz. can cream of chicken soup (condensed)
- 1- 12oz. can Whole potatoes drained, cubed
- 1/3 cup canned carrots, drained
- 1/3 cup peas
- 2 -9in pie crust -unbaked (bottom & top layer)
Instructions
- Pre-heat oven to 350*.
- Place one pie crust in bottom of a 9in pie pan.
- Combine soup,chicken & veggies in a bowl. Pour into prepared pie crust.
- Top with second pie crust and crimp edges. (As if baking a fruit pie.) Cut a slit in the top.
- Bake for 25 to 30 minutes or until crust is golden brown.
Final Comments
1. Frozen pie crust work wonderfully! Just thaw before using.
2. You could also use 1 2/3 cup frozen mixed veggies in place of the canned if that's what you have on hand. Just cook them in the microwave for a minute to take the chill off. Drain any extra water before adding them to your soup & chicken.
3. One more easy alternative (my family's favorite) Instead of a top crust, I'll use left over mashed potatoes as the topper. I just warm them up in the microwave for a few minutes & spread them over my pie. It bakes for the same amount of time.
