Emeril's Potatoes

I serve this often to guests and take it to potlucks. All ingredients are approximate and may vary to taste.
List of Ingredients
2 baking potatoes, cut into chunks
Melted butter or extra virgin olive oil
Emeril's seasoning (I've used original and southwest blends)
Recipe
Coat potatoes with butter or olive oil. Place on non-stick pan or cookie sheet w/Reynolds Release foil. Sprinkle Emeril's seasoning on to taste. I use quite a bit.
Bake 20-30 minutes until potatoes are golden brown and tender.
Serve immedeiately.
