    3 EGG WHITES
    11/2 CUPS SUGAR
    1 CUP UNSWEETENED APPLE SAUCE
    1 TSP. VANILLA
    2 CUPS ALL-PURPOSE FLOUR
    2 TSP. GROUND CINNAMON
    1 TSP. BAKING SODA
    1/4 TSP. SALT
    4 CUPS CORED, PEELED TART APPLES (MCINTOSH OR CRISPIN)
    YOGURT GLAZE

    PREHEAT OVEN TO 350' BEAT THE EGG WHITES UNTIL SLIGHTLY FOAMY; ADD THE SUGAR, APPLESAUCE, & VANILLA. COMBINE THE FLOUR, CINNAMON, BAKING SODA, & SALT IN ANOTHER BOWL; ADD TO THE APPLESAUCE MIXTURE WHEN WELL BLENDED. SPREAD THE APPLES IN A 13x9 INCH BAKING PAN OR 9 INCH SPRINGFORM PAN SPRAYED WITH NONSTICK COOKING SPRAY. SPREAD THE BATTER OVER THE APPLES. BAKE FOR ABOUT 35-40 MIN. OR UNTIL A TOOTHPICK COMES OUT CLEAN WHEN INSERTED INTO THE CENTER OF THE CAKE; COOL ON A WIRE RACK. PREPARE THE YOGURT GLAZE; SPREAD OVER THE COOLED CAKE.

    COMBINE 11/2 CUPS OF PLAIN OR VANILLA NONFAT YOGURT, 3 TBSP. BROWN SUGAR, & 1 TSP. VANILLA EXTRACT, OR 1 TSP. LEMON JUICE. STIR TOGETHER TILL WELL BLENDED & SMOOTH.
