List of Ingredients
1 (16-ounce) bag black-eyed peas, rinsed and drained
1 (15-ounce) can kidney beans, rinsed and drained
1 (14 1/2-ounce) can hominy, rinsed and drained
1 cup chopped tomatoes
2 tablespoons chopped green onions
1 tablespoon chopped garlic
1 jalapeño pepper, finely chopped (optional)
1/4 cup fat-free Italian salad dressing
1 tablespoon lime juice
2 teaspoons Italian seasoning
1/4 cup chopped cilantro (optional)
Recipe
Mix all ingredients and refrigerate for at least 2 hours before serving to let flavors blend.
