Chicken Tetrazzini
1 large chicken, stewed
1/2 cup chopped green pepper
2 cans (4 1/2 oz) mushroom slices or use fresh if desired 2/3 cup flour
1 tsp. salt
1 cup Ritz cracker crumbs
1/2 lb. Spaghetti/2 cup chopped onion
2 sticks butter
4 cups milk
1/2 lb. Grated cheddar cheese

Stew chicken in large pot seasoned with celery and a bit of chopped
onion.Cool broth remove fat & strain. Cut chicken in large,bite sized
pieces, Cook spaghetti in broth until liquid is almost entirely
absorbed.Sauté green pepper, onion and mushrooms in butter.Blend in
flour. Gradually add milk and 1 tsp. salt to sautéed mixture. Stir
until thickened. Add cheese and stir until melted. Combing chopped
chicken, spaghetti and sauce ingredients in a large bowl, mix well and
pour into a greased 9 x 13 casserole. Top with crushed, buttered cracker
crumbs. Bake at 350 for 30 min. or until it is hot and the center of the
casserole is heated . Serves 10 to 12
