Strawberry Cookies

Parkesdale Farm Strawberry-Pecan Cookies
Makes 4 Dozen
1 1/2 cups sugar
1 cup shortening
1/2 teaspoon baking soda
2 large eggs, beaten
1 tsp vanilla
1 tsp. lemon juice
3/4 cup strawberry puree (from 1 pint strawberries)
3 cups sifted flour
1 teaspoon salt
3/4 cup chopped pecans
Recipe
Preheat oven to 350º F.
In a large bowl of an electric mixer, cream sugar, shortening and baking soda; add eggs.
Mix together lemon juice, vanilla, and strawberry puree, add to creamed mixture and mix just until
blended. Stir in flour, salt and pecans. Mix well. Drop by rounded tablespoonfuls onto greased cookie sheet. Bake 15 minutes. Let cool for a few minutes then remove to cookie rack. When completely cooled, dust with confectioner's sugar.
Note: Nuts can be omitted, if desired.
