    I don't know if you would consider this an authentic Italian chicken recipe, but it does have an Italian flavor to it and is quite good.

    Jerry Lewis' Italian Chicken

    Amount Measure Ingredient -- Preparation Method

    4 pounds roasting chicken -- cut-up
    olive oil
    1 cup tomatoes -- chopped
    1/2 cup onions -- chopped
    1/2 cup green peppers -- chopped
    1 garlic clove -- minced
    2 whole cloves
    2 bay leaves
    1 pinch oregano
    salt and pepper
    1 cup cooked rice
    1/4 cup pimentos -- chopped
    1 cup peas -- cooked and drained
    1 cup ripe olives -- sliced

    Brown the cut up roasting chicken in a heavy skillet in 1/4 cup olive oil. Remove and put in a large casserole dish.

    In a skillet combine tomatoes with onions, peppers, garlic, cloves, bay leaves, oregano, salt and pepper. Simmer 5 minutes. Pour over chicken.

    Brown 1 cup uncooked rice in oil. Add to chicken. Cover with water. Bake at 350 degrees F. for 1 1/2 hours or until chicken is tender. To casserole add chopped pimentos, drained cooked peas and the sliced ripe olives. Bake 15 minutes more.

    Judi's Note: Use a little white wine for part of water -- it gives it a nice flavor.
