Aromatic Peach and Cucumber Salsa

2 peaches
1 small cucumber
1/2 teaspoon Angostura bitters
1 tablespoon olive oil
2 teaspoons fresh lemon juice
2 tablespoons fresh mint -- chopped
salt and pepper -- to taste
Using a small sharp knife, carefully score a line right around the circumference of each peach, cutting just through the skin.
Bring a large pan of water to a boil. Add the peaches and blanch them for 60 seconds. Drain and briefly refresh in cold water. Peel off and discard the skin. Halve the peaches and remove their pits. Finely dice the flesh and place in a bowl. Cut the ends off the cucumber, then finely dice the flesh and stir it into the peaches.
Stir the Angostura bitters, olive oil and lemon juice together and then stir this dressing into the peach mixture. Stir in the mint with salt and pepper to taste. Chill and serve within 1 hour.
Variation: Used diced mango in place of peach.
