    Turkey and Wild Rice Salad

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 cups long grain and wild rice -- cooked
    1/2 pound turkey breast -- cooked and cut
    -- into 1/4-inch cubes
    1/2 pound blanched snow peas
    1 red pepper -- seeded and chopped
    1/4 cup fresh parsley -- chopped
    ORANGE VINAIGRETTE:
    2 tablespoons red wine vinegar
    1 tablespoon low sodium prepared mustard
    1 1/2 teaspoons grated orange rind
    1/4 teaspoon black pepper
    1/4 cup nonfat chicken broth
    or
    water
    1 tablespoon honey

    In a large serving bowl, combine rice and next 4 ingredients. Combine vinegar, mustard, orange rind, pepper, chicken broth and honey, beat well with a wire whisk. Add Orange Vinaigrette to rice mixture and toss well.

    Calories 265, protein 21 g, carbohydrates 36 g, Fat 4 g, fiber 3.2g, cholesterol 43 mg, sodium 77 mg
