    Doris Perkins' Spaghetti Sauce

    2 slices bacon -- diced
    1 1/4 pounds ground beef
    1/2 pound ground pork
    1 cup onions -- chopped
    1/2 cup green peppers -- chopped
    3 garlic cloves -- minced
    2 cans Italian tomatoes (2 lb 3 oz each)
    2 cans tomato paste ( 6 oz each)
    1 cup dry red wine or water
    2 1/2 teaspoons dried oregano
    2 1/2 teaspoons dried basil
    1 bay leaf -- crumbled
    3 cups water
    1/4 cup fresh parsley -- chopped
    1 teaspoon dried thyme
    1 teaspoon salt
    1/4 teaspoon pepper
    1/4 cup dry red wine or water

    Brown bacon in skillet until crisp. Drain. Remove. Add ground beef and pork. Crumble and cook until brown. Stir in onions, green peppers, and garlic. Cook 10 minutes. Drain fat and pat dry with absorbent toweling.

    Pour tomatoes into slow cooker and crush with back of spoon. Add all other ingredients, except 1/4 cup wine, in slow cooker. Cover. Bring to boil on high. Reduce heat to low for 6 to 7 hours. During last 30 minutes, stir in wine or water.

    Judi's notes: The original recipe calls for cooking the sauce on low for 3 to 4 hours, which in my opinion is just not enough time to safely cook the ground beef. You may need to add a little more liquid to the crockpot if the sauce becomes too thick. Also, the recipes calls for this sauce to serve 20 people and this is unrealistic -- probably serves 12 hungry people. Also, nutritional value is given if made for 20 servings. If you double the portion, remember to double the calories and exchange values.
