    Tuna Pate

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 can albacore tuna in water -- (16 oz), drained
    1 tablespoon capers -- drained
    2 tablespoons freshly squeezed lemon juice
    1 teaspoon anchovy paste
    1 teaspoon minced roasted garlic
    2 tablespoons skim-milk ricotta cheese

    Combine the tuna, capers, lemon juice, anchovy paste, garlic, and ricotta in the bowl of a food processor or blender and puree until smooth.

    Serve on celery, bread, crackers or crostini
