3 green peppers
2 onions
4 small tomatoes -- cut into chunks
3 tablespoons olive oil
salt and pepper to taste
dash cayenne pepper
6 eggs
Remove the seeds from the green peppers, and cut them in half. Cut into thin strips. Slice the onions into strips. Cut tomatoes into large chunks.
Heat the oil in a pan add the onions and the green peppers. Season with salt, pepper, cayenne pepper and cook over low heat until tender. Add the tomatoes and cook until heated through. Beat the eggs in a small bowl. Pour the eggs into the pan and scramble, moving the vegetables through the eggs with a spatula -- as soon as they are softly scrambled, it is ready. Serve hot.
