Yugoslav Chicken and Red Pepper Soup

1 medium onion -- coarsely chopped
2 garlic cloves -- minced
1/4 teaspoon crushed dried hot peppers
2 medium sweet red peppers -- seeded and diced
2 tablespoons olive oil
1 teaspoon paprika (preferably

6 ounces boneless chicken (to 8 oz) -- cut into
-- small chunks
freshly ground black pepper
6 cups chicken stock
1 medium potato -- peeled and diced
1 cup small cauliflower florets
salt -- to taste
In a medium saucepan, cook the onion, the garlic, the crushed hot peppers, and the diced sweet peppers in the oil over moderate heat, stirring, until the onion wilts and begins to take on red color from the peppers.
Stir in the paprika, then add the chicken and brown it lightly in the mixture. Grind the black pepper over the chicken. Add the stock, the potato, and the cauliflower. Bring to the simmer, then cook, uncovered, over low heat for about 1/2 hour. Taste for salt.
