Pear-Pecan Haroset

2 cups Golden Delicious apples -- shredded and
-- peeled (about 1 pound)
1 cup Bartlett pears --shredded and
-- peeled (about 3/4 pound)
2 teaspoons fresh lemon juice
1 teaspoon vanilla extract
1 teaspoon honey
1/4 cup pecans -- coarsely chopped
Combine first 5 ingredients in a large bowl. Fold in chopped pecans. Refrigerate 2 hours in an airtight container.
Judi's note: I would add a little cinnamon and ginger to this to boost flavor (about 1/2 teaspoon each).
