Pickled Salmon

2 1/2 cups water
1 onion -- sliced
4 salmon steaks -- about 1-inch thick
1/2 teaspoon salt
1 bay leaf
6 black peppercorns
pinch brown sugar
1/2 cup white vinegar
Bring water to a boil in a saucepan set over high heat. Add the onion and cook for 5 minutes. Add the fish, salt, bay leaf, peppercorns, and brown sugar. Cover and simmer over low heat, with the liquid boiling very gently, for 30 minutes.
Carefully remove the fish with a slotted spoon and lay it in a deep dish, such as a casserole. Stir the vinegar into the cooking liquid, then pour it over the fish. Chill until ready to serve.
