    Vegetable Stock #2

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 large potatoes -- quartered
    2 large carrots -- peeled and thickly
    -- sliced
    1 large onion -- peeled and
    -- quartered
    1 celery stalk -- chopped
    1 bay leaf
    12 peppercorns
    10 cups water

    Put all the ingredients into a large pot of cold water: bring to a boil, and simmer, covered, for 45 minutes to an hour. Strain.

    Per 1/2 cup serving: (est.) 20 cal; .5g pro, 4g carb, trace fat
