-------- ------------ --------------------------------
3 tablespoons peanut oil
2 cloves garlic -- peeled and finely
chopped
1 piece ginger root (1 inch) -- peeled and finely
chopped
1 pound green beans -- washed and trimmed
4 spring onions -- washed and sliced
1/2 cup white wine
2 ounces unsalted peanuts
1 pinch and a half of sugar
2 tablespoons soy sauce
Cut beans into one-inch slices. Heat peanut oil in wok until it just begins to smoke. Toss in garlic and ginger root. Add beans and onions and stir-fry for two minutes. Add wine, peanuts and sugar, and continue to stir-fry until the wine has evaporated. Add the soy sauce just before serving.
Judi's note: You can substitute dry sherry in place of the white wine to make a traditional oriental-style vegetable dish.
