Shredded Apple Custard Pie

Pastry for 9" single crust pie
4 eggs
3/4 cup sugar
1/4 cup melted butter
1 teaspoon vanilla
1/2 teaspoon grated lemon peel
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
3 large tart apples -- approximately

Beat eggs and sugar. Stir in butter, vanilla, lemon peel and spices.

Grate apples to make 3 cups. Mix and pour into pie shell.


Bake at 425F for 10 minutes, then 350F 30-40 minutes until set.

Yield:
"1 - 9" pie"
