    I threw this together one day when I needed to make a salad for a potluck. It's a keeper.

    Margarita Chicken Taco Salad

    Amount Measure Ingredient -- Preparation Method

    boned and skinned chicken breasts
    chili powder
    cumin
    margarita mix (We like Cuervo brand)

    Sprinkle chicken with chili powder and cumin. Brown lightly and then braise in margarita mix. I started with about 1/2 cup, and it evaporated before the chicken was done, so add more as needed. This makes a nice, lime-y, caramel-ey glaze. Break into bite-size pieces and use in taco salad.

    Notes:This was amazingly good. Next time I'll marinate the chicken and then grill.

    Serving Ideas : Taco salad bar: Lettuce, chopped onion, grated cheese, diced tomato, olives, salsa, sour cream, guacamole...whatever
