    Baked Potato Soup

    6 potatoes potatoes -- baked
    1/2 cup butter
    1/2 cup flour
    6 cups milk
    1 cup sour cream
    3/4 cup green onions -- sliced. Reserve 1/4 cup.
    1 pound bacon -- cooked and drained
    2 cups shredded cheddar cheese -- reserve 1/2 cup
    salt and pepper -- to taste

    Scoop out centers of potatoes and reserve. Chop 1/2 the peels and reserve.

    Make a roux with the butter and flour. Add the milk and cook and stir until thickened.

    Stir in sour cream, 1/2 c. green onions, bacon and 1 1/2 cups cheese and heat until cheese melts. Season to taste with salt and pepper.

    Garnish each bowl with shredded cheese and green onions.
