Chipotle Mashed Sweet Potatoes

2 large sweet potatoes -- peeled and cooked
2 tablespoons butter
1 canned chipotle pepper in adobo sauce -- chopped (or more, to taste)
1 teaspoon adobo sauce from can of peppers
Add butter to hot sweet potatoes and mash. Add peppers and sauce and mash to combine.
This can be served immediatly or put into an oiled casserole dish, dotted with butter, and baked for a bit.
