    Golden Potato Squares

    3 pounds potatoes
    1/2 cup butter -- melted
    3/4 cup chopped onion
    1 cup evaporated milk
    3 eggs -- beaten
    1 3/4 teaspoons salt
    1/2 teaspoon pepper
    1 3/4 cups shredded cheddar cheese -- divided

    Saute onion in butter until limp Add milk and bring to a boil.

    Mix eggs, salt and pepper. Beat until frothy. Shred potatoes and stir into egg mixture. Stir in milk and onion mixture and 1- 1/4 cup cheese.

    Spoon into oiled 9-inch square baking dish. Bake at 350F for one hour. Top with remaining 1/2 cup cheese and continue to bake for 30 minutes more.

    Cut into squares.
