    CHOCOLATE MOUSSE CAKE

    4 oz unsweetened chocolate, chopped
    1 cup unsalted butter
    1 cup sugar
    1 tsp vanilla
    2 eggs
    3 cups all purpose flour
    1 1/2 tsp baking powder
    1 tsp baking soda
    3/4 tsp salt
    1 cup buttermilk
    2 pkgs instant milk chocolate mousse mix
    1/2 tsp cinnamon
    chocolate curls

    HEAT OVEN TO 350 DEGREES. Coat 15X10X1 inch pan or jelly roll pan with cooking spray. Line with waxed paper, coat paper with spray. Melt chocolate in bowl in microwave on 100% power for 2 min. Stir until smooth. In 2nd bowl,
    beat butter, sugar, vanilla, until smooth. Beat in eggs and melted chocolate, in 3rd bowl, mix flour, baking powder, baking soda and salt. Beat in flour mixture and
    buttermilk into butter mixture, spread in pan. Bake 25 min. or until done, cool. Invert cake onto rack. Remove pan and paper. Slice cake crosswise into thirds, prepare mousse according to pkg directions, adding cinnamon. Stack cake
    layers, with 3/4 cup mousse between layers and 1 1/4 cups on top. Chill 1 hour. GARNISH WITH CURLS.*
