    4 squares unsweetened chocolate chopped
    3/4 cup brewed coffee
    2 1/4 cups all purpose flour
    1/2 cup unsweetened cocoa powder
    1 tsp baking soda
    1/2 tsp baking powder
    3/4 tsp salt
    3/4 cup unsalted butter, softened
    2 cups light brown sugar
    1 tsp vanilla
    3 eggs
    1 cup buttermilk
    MILK CHOCOLATE FROSTING:
    11.5 oz package milk chocolate chips
    1 cup unsalted butter, softened
    1/2 tsp salt
    3 cups confectioners sugar
    1/4 cup heavy cream

    HEAT OVEN to 350 degrees. Coat two 9X2 inch round cake pans with cooking spray. Line bottoms with waxed paper. Coat paper with spray. CAKE: In saucepan melt chocolate with coffee until smooth. Let cool to room temp. In bowl, mix flour, cocoa, baking powder and soda, salt. In 2nd bowl beat butter, sugar, vanilla until creamy. Beat in eggs. Beat in chocolate mixture, beat in flour mixture with buttermilk. Divide between pans. Bake 45 min. or until done. Cool cakes in pan. Invert on racks, remove paper.

    FROSTING: Microwave chocolate in bowl on 100% power 1 min. stir. Microwave 30 sec. stir until smooth. In bowl, beat butter and salt until creamy. Beat in sugar until smooth, then melted chocolate. Beat in cream until fluffy. Place one cake layer on platter, spread top with 1 1/2 cups frosting. Place second cake layer on top. Use remaining frosting to cover sides and top of cake. MAKES 16 SERVINGS.
