1 3/4 c unbleached flour
3/4 c granulated sugar
1/2 c brown sugar -- packed
1/4 c walnuts -- chopped
2 tsps cinnamon
1 tsp baking soda
1 tsp nutmeg
1/4 tsp salt
1 c fat-free sour cream
1 c pumpkin, canned
3 whole eggs
Recipe
Preheat oven to 325. Prepare a 9 x 5" pan with cooking spray; set aside. In a mixing bowl, combine flour, sugars, walnuts, cinnamon, baking soda, nutmeg, and salt. In another mixing bowl, combine sour cream, pumpkin, and eggs. Mix dry ingredients with wet ingredients just until moistened. Spread into prepared pan. Bake for one hour and
15 minutes.
