MEXICAN-STYLE GROUND BEEF AND NOODLE CAS

1 lb. ground beef
1 c. salsa
1/2 c. water
1 green pepper; chopped
1 bunch of green onions; chopped
1 (8 oz) pkg. wide egg noodles
1/2 c. sour cream
1/2 c. shredded cheddar cheese
1 tomato; choppedRecipe
In a large nonstick skillet, cook and stir ground beef until browned. Drain off excess fat. Stir in salsa and water and simmer for 10 minutes. Meanwhile cook pasta in boiling water until al dente. Drain. Stir in green pepper and onions in the salsa mixture and continue simmering until veggies are crisp/tender. Stir in noodles and sour
cream. Sprinkle grated cheese on top and cover pan until cheese melts. Sprinkle chopped tomatoes on top and serve.
Serves 4 or 5
