4 bell peppers, cut in half and seeded
1 lb ground beef
1 pkg enchilada seasonings
Grated cheese
2 cans (8 oz) tomato sauce
Salt and pepper to taste

Brown meat; drain. Add remaining ingredients to the meat, except rice and cheese; mix well. Add rice; blend well. In casserole dish, arrange bell pepper halves on bottom, open side up. Stuff meat and rice mixture into each bell pepper. With remaining meat mixture, spread around
bell peppers to fill any gaps.Put in the oven at 350 F. for 30 minutes until cheese melts. Or microwave on HIGH for 30 minutes until cheese melts. last few minutes of cooking, add the cheese to melt on top.
