8 oz. cream cheese; softened
1/3 c. sugar
2 tablespoons rum or 1/2 tsp.rum extract
3 1/2 c. cool whip
1 small can crushed pineapple
2 2/3 c. coconutRecipe
Beat cream cheese with sugar and rum until smooth. Fold in 2 cups of cool whip, pineapple with juice, and 2 cups of coconut. Spread in a 8" dish lined with plastic wrap. Invert pan onto serving plate and remove from pan and plastic. Spread with the remaining whipped topping and sprinkle with coconut. Freeze until firm; about 2 hours.
