APPLE AND BLUE CHEESE SALAD

2 tbs sherry wine vinegar
1 tbs lemon juice
1 tbs honey
1/4 tsp each salt and pepper
1/3 cup olive oil
10 cups mixed salad greens
4 oz hard blue cheese
3 apples (any kind) cut into cubes
2 ribs celery, sliced
1/2 red onion, slicedRecipe
In bowl, whisk together vinegar, lemon juice, honey, salt and pepper. Drizzle in olive oil while whisking until thick and well blended. In 2nd bowl, toss together the salad greens, blue cheese, apples, celery, onion, until well
mixed. Drizzle the dressing over top of salad, toss, serve
immediately.*
