    BROCCOLI CHEESE SOUP

    List of Ingredients

    1/2 lb. broccoli
    2 Tbsp. minced onion
    1/4 c. butter or margarine
    3 Tbsp. flour
    3 c. evaporated milk
    3 1/2 c. lowfat milk
    3 1/2 c. shredded cheddar cheese
    Salt
    Pepper

    Recipe

    Cook broccoli until tender; drain and chop. Cook onion in melted butter until tender, not brown. Blend in flour. Add milks; stir until smooth and thickened. Add cheese and broccoki. Season to taste with salt and pepper. Stir over low heat until cheese is melted. Do Not Boil! Gets thicker andricher with patience!
